Baking Outside of the Lines

Today I baked a heavily modified version of this recipe.

My alterations:

  • 1 can of crushed pineapple, drained
  • 2 cups shredded, raw carrots (I used a food processor, but would be a grate lifting workout #seewhatidid)
  • 1/2 c raisins
  • 3 T coconut oil, softened (because we're having straight up Othellian weather on the East Coast rn)
  • 2 t vanilla extract
  • 1 c rolled oats
  • 1/4 c sifted coconut flour (the recipe specifically says "excluding coconut flour," but what can I say, I'm a baking rebel)
  • The following spices:
    • 1 T cinnamon
    • 1 t nutmeg
    • 1/2 t ginger
    • 1/4 t cloves
    • 1/4 t allspice
  • 1/4 tsp salt
  • 1/2 tsp baking soda
  • No stevia OR sugar of any sort

Method:

  1. Preheat oven to 350 degrees F
  2. Mix everything in a large glass bowl, in the order listed, because fuck dirtying two mixing bowls.
  3. Spray a 9 x 13 glass pyrex with coconut spray
  4. Pour in the mixture
  5. Top with 1/2 c chopped walnuts (or whatever nuts you have around) and about 1/2 c unsweetened coconut flakes
  6. Bake for 30 minutes, rotating after 15 minutes
  7. Cool and eat (for dessert AND breakfast)

I topped with:

  • 1 t cream cheese (I used whipped, it was what I had in the fridge)
  • 1/3 c plain greek yogurt (if you use vanilla yogurt, omit vanilla extract)
  • 1/4 t maple syrup
  • 1 t vanilla extract

Method:

  1. Microwave cream cheese in a mug for 15 seconds or fewer, you just want to make the cream cheese mushy
  2. Mush cream cheese with a fork, add greek yogurt, syrup, and vanilla
  3. Add more syrup if you want it sweeter

Moral of the story, I'm terrible at following directions, but it often works out. I surprised myself with how good the crumb turned out. I will definitely be eating it for breakfast tomorrow morning with plain greek yogurt on top!
